Step By Step - Instructions

Melt butter in a suitable pan and add the chopped onions and garlic fry gently until they are tender with not too much colour
Add the herbs, vinegar and sugar, cook for 1 minute
Add the tomato puree and stir well, then add the tinned tomatoes
Add potatoes and water bring to the boil
Add the essential cuisine vegetable stock and simmer for 25 minutes
Remove the bayleaf and blend the soup in a liquidiser or stick blender
Pass through a sieve into a clean pan
Add the cream and basil, bring to the simmer
Season to your taste and your soup is ready to serve

10ml olive oil.
100g chopped onion.
2 crushed garlic cloves.
1 bayleaf.
Half sprig of thyme.
25ml white vinegar.
Half tsp sugar.
50g tomato puree.
50g chopped tinned tomatoes.
20g essential cuisine vegetable stock.
1 ltr water.
200g diced potato.
10g chopped fresh basil leaves.
100ml single cream.
A good twist of freshly ground pepper.
