Seared Salmon with Pineapple Salsa

Step By Step - Instructions

Combine all the salsa ingredients except the avocado (save if for just before serving).
Refrigerate the salsa for as long as possible, can even be over night.
Pat the salmon pieces down with paper towel and place in a dish.
Pour the olive oil/avocado oil over the salmon and add the lime juice, zest and salt - cover and leave to stand for 1/2 an hour.
Over a high temperature, heat a griddle pan on the stove to really hot, drizzle with a little olive oil.
Place the salmon pieces on the griddle and cook for a few minutes on both sides.
Add the chopped avocado to the salsa and mix well.
Remove from the heat, and serve immediately with cauliflower rice topped with salsa and a scoop of the juices.
Serve topped with chopped fresh coriander.

4 pieces Salmon Fillets
Juice of 1/2 lime
Zest of 1/2 lime
Pinch of salt
1 Tbsp avocado or extra virgin olive oil


1/2 fresh pineapple - chopped into small squares
2 red chilli - chopped
1 green chilli - chopped
1cm x 1cm square of fresh ginger (or slightly bigger if you love ginger)
juice of 1 lime
1 Avocado - peeled, pip removed and cubed
