Step By Step - Instructions

Take your sirloins and place it into a shallow dish.
Rub them generously on all sides with the sea salt and garlic.
Allow to sit at room temperature for about half an hour.
At the end of that time thread the chunks, curling them so that the fat edge is at the outside, onto a couple of long metal skewers.
Heat the grill or the barbecue to high.
Sear the steaks well on both sides, cooking for a total of about 5 to 8 minutes altogether, turning them halfway through the cooking time.
(Depending on the degree of done-ness which you prefer. We like our steaks on the rare side.)
Allow to stand for several minutes before serving.
Slice to serve and serve with cheese buns and lightly sauteed spring greens.
Alternately if you don't have any skewers you can cook the steaks directly on the grill until your desired degree of done-ness.

2 Tbs Extra Coarse Sea Salt.
4 Cloves Of Garlic, Peeled And Finely Minced.
