Step By Step - Instructions

Prep:
Preheat the oven to 150C
Heat the oil in a casserole dish, add the lamb/goat and cook until lightly browned, turning frequently
Allow to cool a little then add the marinade and white wine, mix well
Tightly wrap tin foil around the dish, making sure it is completely sealed and place in the oven and leave to cook slowly for approx 6 hours
Remove meat from the bone and pull apart using 2 forks, place any juices in a jug to one side.

For the Pie:
Preheat the oven to 180C
Line a dish with greaseproof paper, drizzle with a little rosemary oil
Place a layer of sliced sweet potato on bottom of dish and season with salt and pepper
Sprinkle with some spinach
Lay half of the pulled lamb/goat over the sweet potato
Repeat the process
Finish with a final layer of sweet potato
Pour over any remaining meat juices (and extra wine if a little dry)
Cover with foil and place in the oven for approx 50 minutes until the sweet potato is cooked through

To serve invert on to a serving plate and slice

For the lamb/goat confit:
3tbsp rapeseed oil
1 kg lamb shoulder
80 ml rosemary & garlic marinade
100ml stock

For the torte:
1tbsp rosemary oil
2 handfuls spinach
2kg sweet potato, peeled and thinly sliced
salt and freshly ground black pepper
lamb juice from confit
