Step By Step - Instructions

Melt butter in a suitable pan and add the chopped onions, leeks and garlic, fry gently until they are tender, with not too much colour
Add potatoes, water and essential cuisine vegetable stock
Bring to the boil and simmer for 30 minutes or until the ingredients are tender, removing any scum from the surface
Puree in a liquidiser or using a stick blender and pass soup through a sieve
Return to the saucepan, stir in the cream and bring back to the simmer
Finally season to your taste, your king louis leek and potato soup is now ready to serve, finish by sprinkling with chopped chives

1 Crushed Garlic Clove.
250g Chopped Potato.
1litre Water.
20g Essential Cuisine Vegetable Stock.
100ml Double Cream.
10g Finely Chopped Chives.
