Step By Step - Instructions

Heat the oil over medium high heat in a large pan.
When hot but not smoking, add the chopped onions.
Allow the onions to sizzle for about five minutes until lightly browned and translucent.
Now add the diced tomatoes and fry for a further three minutes or so, stirring often.
Add the sliced green chillies and fry for a further 30 seconds and then add the eggs.
Do not stir.
Just allow the eggs to coat the bottom of the pan as you would if you were making an omelette.
After about a minute or so, start folding it all together.
As you do this the egg will continue cooking until you are happy with the consistency.
Sprinkle with the ground cumin and chopped coriander and serve immediately.

5 Free Range Eggs - Lightly Beaten.
2 Tablespoons Olive Oil.
2 Medium Sized Onions - Finely Chopped.
2 Medium Sized Tomatoes - Diced.
2 Fresh Green Chillies - Sliced Into Rings.
Salt And Freshly Ground Pepper To Taste.
Half Teaspoon Cumin Powder ( I Use My Own Smoked Cumin Powder Which Works Well Here.
