Step By Step - Instructions

Preheat oven to 160c
Combine the pork, bacon, onions, mushrooms, prunes, spices, soy sauce and sage together in a bowl, season with freshly ground pepper and sea salt to taste
Line the bottom of a suitably sized roasting dish with half of the sliced potatoes topped with half of the sliced aubergines
Arrange the pork mix evenly onto the aubergine then cover with the remaining aubergine, finally the remaining potatoes as neatly as possible
Pour over the hot essential cuisine chicken stock
Cook in the oven at 160C for approximately 1 hour or until the pork and potatoes are tender
Occasionally push down the top layer of potatoes with a fish slice to submerge them under the stock to keep moist
Once cooked, remove from the oven, the stock should be absorbed into the dish and the potatoes should have a golden brown glaze
Your hot shot hot pot is now ready to serve

50g Smoked Bacon Or Pancetta Cut Into Fine Strips.
200g Thinly Sliced Onions.
100g Thinly Sliced Mushrooms.
50g Chopped Pitted Prunes.
Qtr Tsp Ground Cumin.
Qtr Tsp Ground Coriander.
1tbsp Light Soy Sauce.
Qtr tsp Rubbed Sage.
500ml Hot Essential Cuisine Chicken Stock.
500g Sliced Raw Potatoes, 5mm Thick.
2 Medium Aubergines, Sliced Lengthwise, 5mm Thick.
Good Twist Of Freshly Ground Pepper.
