Step By Step - Instructions

Preheat the oven to gas 6, 200C, fan 180C. Place the peppers, garlic, onion and one lemon cut into wedges in a roasting pan.
Top the veggies with the chicken.
Mix together the butter, salt and zest of 1 lemon.
Smear the butter all over the chicken covering it entirely.
Insert 2 halves of a lemon into the cavity and few sprigs of roasting herbs
Lattice the bacon on a sheet of greasproof paper.
Pick up the paper and bacon and turn it upside down on the crown of the chicken and peel off the paper leaving the bacon.
Tuck the bacon into the grooves of the leg, wings and the string used to truss the chicken (if you are worried about it then jab toothpicks in to hold it in place)
Roast for 30 minutes, then cover just the breast with kitchen foil to prevent it drying out.
Roast for a further 60 minutes (this may take a while longer depending on the size of the chicken), until the chicken is cooked through and the juices run clear when the thickest part of the thigh is pierced with a skewer or even better test with a thermometer.

To lattice the bacon, you will need 7 straight slices for vertical and 6 straight slices for horizontal -
On a sheet of greaseproof paper lay out 7 pieces vertically, touching each other.
Starting from the first slice, fold back each alternate slice halfway (1,3,5,7).
Lay a horizontal slice across all the vertical slices.
Fold the vertical slice back over.
Repeat the process using the alternate vertical slices (2,4,6)
Fold the slices back and finish the first half with the original slices (1,3,5,7)
Once the first half is finished, turn the paper around repeat the whole process again with the other side.

The lattice can be used to wrapped around other foods like a chicken crown or just enjoyed on its own (make them for breakfast topped with a fried egg).

5 mixed peppers - cut in half
2 onions, cut into rough wedges
3-6 garlic cloves, peeled
3 lemons
3 Tbsp butter - room temperature
2 tsp rock salt
