Step By Step - Instructions

Peel the potatoes and slice in half lengthways, add to salted water and boil for 15 minutes untill almost coocked.
Plunge into cold water to stop cooking and set aside.
Cut the onion almost all the way to the stem with 2 cuts.
Add the whole onion and the bay leaf to the fish stock.
Bring to the boil and add the fish mix for 3 mins.
Remove fish and set aside, boil the stock and veg for 10 mins untill reduced.
Grate the celery into the dish to be used to cook the pie.
In a separate pan, melt the butter.
Add the flour and gently cook before adding a tin amount of fish stock to make a roux.
Gradually add enough fish stock to the mix untill there is enough thickened stock to cover the fish mix in the ovenproof dish being used.
Add the double cream and parsley and warm through.
Add pepper to taste - unlikley to need salt as the fish will have enough.
Pour the sauce over the fish mix.
Add the frozen peas to the top of the pie - or you could use fresh spinach leaves at this point.
Slice the potato thinly and place accross the top.
Cover the dish and cook at 175c for 20 mins.
Uncover during the last 5 mins to gently brown the potato topping.
Sprinkle with the chives and serve with generous helpings of greens for a feel - good evening meal.

300g Fish Cut Into Chunks (Smoked, White, Salmon, Prawns) Whatever You Like.
1 Stick Of Celery.
1 Small Onion.
2 Cups Of Fish Stock (stock cube is fine).
Cup Chopped Fresh Parsley Leaves.
Cup Frozen Peas.
1 Bay Leaf.
2 Tablespoons Double Cream.
3 Large Potatoes.
25g Butter.
1 Tablespoon Plain Flour.
Salt And Pepper.
