Place chicken skin side up on baking tray in a preheated oven (220). Cook until thermometer inserted into chicken breast reaches 165, cook for further 25 - 30 mins more. Suggestion: rub chicken with oil and salt, place chicken on half a sliced lemon on baking tray, place the remainder of the sliced lemon under the skin of the chicken, cook as before.
