Recommended Cooking Methods
Temp: Gas mark 6, 200øC (395øF)
Time: 20minutes + 20minutes per 500g
Notes: Pre heat oven to Gas mark 7, 220øC (425øF) and cook duck for first 20mins at this temperature
then turn down the heat to Gas mark 4, 180øC, 350øF and roast for another 2 -2.5 hours for a 2-3kg.
Duck is cooked when juices run clear (like chicken).
