Aberdeen Angus beef cattle originate from Scotland in the counties of Aberdeenshire and Angus; hence the name Aberdeen Angus beef! This beef breed is probably the most famous and Aberdeen Angus steaks are known to beef eaters across the world. It is considered one of the best breeds of beef because the meat is balanced, firm, fat, lean, and coupled with a delicate and prolonged, delectable taste too. The grass-reared Aberdeen Angus beef meat is also higher in Omega-3 and lower in fat. The lean part of the meat has an understated taste and touch, whilst the fat gives its own distinctive taste. So, there are definitely many benefits from buying free range, grass-reared Aberdeen Angus beef.

Why Angus?

Due to the great relationship between Farmers Choice and the farmers of Orkney, the Orkney Angus brand was born.
Orkney Angus is a pure breed Angus and is endorsed as such by the Aberdeen Angus Certification.
Orkney Angus has a smooth, close-grained texture with fine threads of creamy white fat interwoven throughout the lean parts, known as marbling. Marbling is characteristic of Angus beef and prevents beef from becoming hard and leathery and ensures that superb flavour of really first class beef.
All Orkney Angus supplied by Farmers Choice Free Range Ltd will be 21 day hung on the bone as our beef has always been but, we have adopted the traditional method of Hip Hanging our beef to further tenderise.

Marbling

Fat is critical to the flavour of meat, marbling is small streaks of intramuscular fat that are found in the muscle. This has a benefical effect on juiciness and flavour by melting through its surroundings during the cooking process.
